Squash, the friendliest vegetable in the garden, is divided into Winter and Summer categories. You would think that has something to do with how they are grown, you'd be wrong. Winter Squash has tougher skin and thus stores well in a cool dark place. Pick winter squash right after the gloss goes out of the skin and you can't easily dent it with your fingernail. Summer Squash is best picked when small. They are high in Beta-Carotene, Folic Acid, Calcium and Vitamin C and really low in calories.
